BROCCOLI SALAD
(from a sweet former member of the Prattville Promenaders)

1 bunch broccoli (flowerets only, approx 4 cups)
1 small red onion chopped (use if you like)
1 cup Spanish peanuts (husk on)
1/2 cup raisins

Mix and chill above 4 items

 

Note: This makes a lot. I just mixed up what I thought we would use unless taking for a covered dish supper.

DRESSING:
1 cup mayonaise
2 tablespoon red wine vinegar
1/2 cup sugar (I use 1/3 cup)

Mix and chill above 3 items

When ready to serve pour dressing over broccoli mix.

7-LAYER SALAD
1 head of cabbage, finely shredded
½ - 1 cup chopped celery
½ - 1 cup green pepper, chopped
1 Spanish onion, sliced
½ 10-ounce package of frozen English peas
1 pint mayonnaise, spread like frosting
1 tablespoon sugar
4 - 6 ounces of shredded cheese
8 strips of bacon, crumbled

Layer ingredients in a large flat bowl.  Cover with Saran Wrap and chill for 8 hours.
  This recipe has been in our family for several years.  I made it for the Prattville Promenaders, where it was a big hit.

Ramen Pasta SALAD
3 packages Ramen noodles -- uncooked
(any flavor)
3 cups Finely shredded cabbage
1/2 cup Thinly sliced celery
1/2 cup Finely shredded Cheddar cheese
1/2 cup Diced carrot
1/4 cup Vegetable oil
2 tablespoons White vinegar
2 teaspoons Sugar
2 teaspoons Seasoned salt
1/2 teaspoon Dry mustard
1/4 teaspoon White pepper
Paprika


Prepare Ramen noodles according to package directions but do not add spice packets; drain. In large bowl combine noodles, cabbage, celery, cheese, and carrot.
In small bowl blend oil, vinegar, sugar, seasoned salt, dry mustard, and pepper. Add to noodle mixture; toss to coat. Chill thoroughly. Toss gently and sprinkle with paprika before serving.

Serving Size : 8

 

I brought this salad to Jean and Comer’s for practice time. Some of the promenaders loved it and asked for the recipe. One asked how I got the spaghetti to curl! I said it was from my daughter, Heather, who is a great cook. Heather should be proud she is mentioned in the Prattville Promenader web site!
